Cast Iron Star Garlic Bread

A quick and easy recipe by Miss Gao’s Magic Ingrediants for beautiful garlic bread using a cast iron pan.

Time: ~2.5hr

Ingredients

The ingredients are common pantry items.

  1. Instant dry yeast 2g
  2. Room temperature water (<40°C) 200g

  3. Bread flour 200g
  4. Whole wheat flour 100g (interchangeable with bread flour or durum flour)
  5. Sugar 12g
  6. Salt 2g
  7. Vegetable oil 24g

  8. 1 Head of garlic
  9. 2 Green onions
  10. Unsalted or salted butter 50g

  11. 1 Egg

Equipments

  1. Large mixing bowl
  2. Oven at 205°C/400°F
  3. Cast iron pan
  4. Parchment paper
  5. Spatula
  6. Pastry brush
  7. Rolling pin

Steps

Dough

  1. Dissolve 2g of yeast in 200g of room temperature water in a cup.
    1. Make sure to use fresh yeast. The bread won’t rise properly if the yeast is stale.
  2. In a large mixing bowl, add 200g of bread flour, 100g of whole wheat flour, 12g of sugar, 2g of salt, 24g of vegetable oil. Add in the yeast water slowly while mixing the dry ingredients with a spatula.
  3. Continue mixing until everything is fully incorporated. Can use your hand to do this.
    1. Your hand won’t stick if it’s dry.
  4. Cover and let the dough rest for 20 minutes.
  5. Knead the bread for 1 minute.
    1. Knead by stretch and fold the dough back onto itself.
  6. Lightly oil the dough and let it rest for 1.5~2hrs.

Garlic

  1. Finely mince 1 head of garlic and 2 stalks of green onions.
  2. With low heat, melt the unsalted butter and add in the minced garlic, green onions, and 4g of salt. Cook for 5 minutes until water is evaporated. Let it cool after.
    1. Don’t add salt if using salted butter.

Combine

  1. Evenly divide the dough into 4 pieces. Stretch the piece into a ball, tuck in the rough side to show a smooth side.
  2. Roll and flatten the dough into a circle that’s roughly the size of your hand.
  3. Layer the garlic butter ontop of the dough. Dough -> butter -> dough -> butter -> dough -> butter -> dough.
  4. Use something to lightly imprint a circle in the center of the layered dough as a reference line.
  5. Cut 8 evenly spaced cuts through the dough along the circumference of the dough up to the reference line.
  6. Make a slightly deeper cut in between the previous cuts. Then take the pieces, and gently pull and twist twice outward. Then pinch the ends to form a pedal. Slightly fluff the layers on the pedal.
  7. Repeat this for all pieces.

Bake

  1. Place the finished dough on parchment paper, and transfer it into a cast iron pan. Cover and let it rest for 45~60min.
  2. Brush egg wash on the bread.
  3. Bake in preheated oven at 205°C/400°F for 25~28 minutes.
